It’s still Winter, which means its still cold.
And on those cold days, there’s nothing like a good bowl of hot soup to warm you up.
From one of our readers; Wanda Tyndall, comes this hearty recipe for Taco Soup.
Served with a side of cornbread and a glass of sweet tea, this soup is sure to please the pickiest eater and warm the soul… tummy too.
2# lean ground beef with 1 cup chopped onion, browned and drained
1 pkg Taco seasoning
1 pkg Ranch dressing mix…add to ground beef, heat through and mix well
*1 can pinto beans
*1 can kidney beans
*1 can black beans
*1 can whole kernel corn… drain and rinse these and add to soup pot with ground beef
2 cans of diced tomatoes
1 can Rotel tomatoes
2 cans of Beef Broth
Simmer on low for an hour or so, until good and hot. Serve with cornbread.
